Three ways to build a traditional Italian gelato case from Elenka bases, dosages given per litre of mix.
Fior di Latte
Per litre
- Whole milk – 1 L
- Lattepanna/50 (cod. 773) – 50 g/L, hot process
- Vaniglia Bianca with pods (cod. 363) – 50 g/L, optional for the speckled finish
Pistachio
Per litre
- Whole milk – 1 L
- Novacream 50 (cod. 878) – 50 g/L
- Pistacchio Trinacria 100% (cod. 835) – 80 g/L
Trinacria is certified Sicilian pistachio with no added colouring.
Amarena
Per litre
- Fior di Latte base, built as above
- Confettura Amarena (cod. 851) – 100 g/L, folded in at extraction for a marbled ripple
- Reserve a few whole cherries to top tubs or cones

Cocktail Recipes
Three classics built for Luxardo Original Maraschino Cherries.
Manhattan with Luxardo Maraschino Cherry
- 60 ml rye whiskey
- 30 ml sweet vermouth
- 2 dashes Angostura bitters
- 1 Luxardo Original Maraschino cherry
- Optional: 5 ml syrup from the jar
Stir with ice 20 to 30 seconds, strain into a chilled coupe, drop the cherry in.
The jar syrup is what sets a real Luxardo cherry apart from a bright red cocktail cherry.
Aviation
- 60 ml gin
- 22 ml Luxardo Maraschino liqueur
- 15 ml crème de violette
- 22 ml fresh lemon juice
- Garnish: 1 Luxardo Original Maraschino cherry
Shake all ingredients with ice, strain into a chilled coupe, and drop the cherry in.
Last Word
