Seasonal Cake

This mesmerizing snail-shaped cake from Friuli-Venezia – half brioche, half strudel – is traditionally filled with a crumbly paste of walnuts, raisins, pine nuts, lemon and vanilla. Other additions of dried fruits and liqueurs is what sets one gubana apart from the next. The filling here is a long list of ingredients, but each one plays its part in creating a rich, intensely flavored cake. The caramelized sugar crust on top and dousing a wedge in grappa (which tradition calls for) puts this cake on an all-year-round list, not just during the holiday season.

Italian Gubana Cake

There are many tales surrounding the origin of gubana, a fruit- and nut-filled cake from Northern Italy that was traditionally baked to celebrate important occasions, particularly weddings. With the passage of time, recipes and methods have changed as they were handed down through the generations. The third-generation head of Vogrig Gubana company stressed that, while demand for their gubana remains high, they will not make any shortcuts in the production process because of their commitment to excellence. Like many traditional cakes and breads, making a gubana requires multiple periods of kneading and letting the dough rest.

From the Italian panettone or Fruit Gubana cake, panettone is a large fruity enriched sweet bread, typically served during Christmas throughout Italy and in Italian communities around the world. Originating in Milan, it is a large, dome-shaped cake that has been leavened with yeast.
